There is no snack more loved than the humble nut to be served along side your drink of choice during cocktail hour. We have a couple of recipes to share that will give Union Square Cafe's bar nuts a run for their money!
First up on the menu, inspired by Autumn, is a recipe for Pumpkin Pie Nuts. Perfect to satisfy the sweet tooth: scatter over a warm bowl of oats on a crisp morning, or an interesting addition to a seasonal cheese platter. PUMPKIN SPICE NUTS
Ingredients:
2 tbs ground cinnamon
1.5 tsp ground ginger
1 tsp freshly ground nutmeg
0.5 tsp ground clove, allspice and cardamom
A pinch of black pepper
4 cups mixed nuts (we love a blend of almonds, walnuts, hazelnuts, cashews, Brazil nuts and pecans).
1 cup dark brown sugar
1/3 cup water
Sea salt flakes to taste
Method:
Preheat your oven to 180°C. Begin by roasting your nuts. Toss the nuts onto a baking sheet and roast, tossing them every 2 minutes for around 10 minutes or until golden.
Next up is our attempted replication of the Gewürzhaus Chermoula Nuts. This spice mix is lively, complex and seriously addictive. Proceed with caution.
CHERMOULA ROASTED NUTS
Ingredients:
500g mixed nuts
2 tbs brown rice syrup
2 tbs Chermoula spice blend (we love the Gerwürzhaus blend)
30g unsalted butter, melted
1 tsp salt
Method:
Preheat oven to 160°C.
Add all of the ingredients aside from the nuts to a large bowl and stir well.
Add the nuts to the bowl and stir well to combine, ensuring that each nut is evenly coated.
Pour the nuts onto a lined baking sheet, and use a spatula to turn and spread the nuts out to form an even layer.
Bake the nuts, stirring well every 5 minutes for 20-25 minutes or until the nuts are golden.
Allow to cool to room temperature and serve.
